The thermo or pro-metabolic approach begins from a single organising idea: health is the capacity of cells to produce energy, and the ideal diet is whatever maximises that production. Followers of the researcher Ray Peat, whose writings underpin the diet, argue that the body runs best on a steady supply of easily metabolised carbohydrate — ripe fruit, fruit juice, honey, milk and well-cooked root vegetables — because glucose is the fuel cells convert to energy most efficiently, particularly through the oxidative metabolism that powers the thyroid-driven systems of the body. Keeping that fuel constantly available, they contend, spares the organism from running on stress chemistry. This is the diet's sharpest break with fashionable alternatives. Low-carbohydrate and fasting regimes, on the pro-metabolic account, do not liberate the body but starve it: when glucose runs short, the body raises cortisol and adrenaline to strip sugar from its own muscle and suppresses thyroid function to conserve fuel — a survival response mistaken for fat-burning virtue.
